I have always used 1 pillow to sleep but I wonder if it would be better for me to sleep with my chest elevated.

I use a body pillow & have since I broke my femur in 1980. To be honest I don't always use my body pillow but most of the time I sleep in my recliner. When I sleep in my bed I raise the head of it. If I try to sleep flat, I choke, cough, & hack almost all night which means my oxygen is of no use to me at all.

The issue isn't better or worse, it's what works for you to help you breathe comfortably. Many people find that if their head is elevated, they can breathe better. One way to do that is to use multiple pillows. Other people raise the head of the bed by propping it up on bricks or cement blocks. Others get beds that raise the head of the bed electronically. There are lots of ways to do it, so find the one that works for you. Some people skip beds entirely and sleep in their recliners.

@A MyCOPDTeam Member. I use to use 2 pillows but I invested in an adjustable bed and I keep my head and feet elevated. I find that I sleep better and am not coughing so much at nite

I don't have any info. but it seems a lot of people do use more than one pillow. It shouldn't hurt to give it a try if you are having a problem breathing.
